WebP is the best default for websites — it is 25-35% smaller than JPG at the same visual quality and every current browser supports it. Use JPG for photos that need maximum compatibility, PNG when you need transparency or crisp text and lines, and AVIF when you want the smallest files and can accept slightly slower encoding.
It depends on the target format. Converting to PNG, BMP or TIFF is lossless — nothing is discarded. Converting to JPG, WebP or AVIF is lossy, so some data is thrown away, though at the default quality the difference is usually invisible. Converting a JPG to PNG will not restore quality that the JPG already lost.
